President of the Ghana Association for Food Scientists and Technologists (GhAFoST), Nana Professor Emmanuel Afoakwa

The Vice-Chancellor of ϳԹ (GCTU), Prof. Emmanuel Ohene Afoakwa, has called for a decisive shift towards homegrown solutions to Africa’s food security challenges, stressing the need for the continent to take responsibility for feeding itself.

He made the statement while delivering the keynote address as Guest Speaker at the 2026 Food Festival of Kwame Nkrumah University of Science and Technology (KNUST) on Friday, 13 February 2026, in his additional capacity as President of the Ghana Food Science and Technology Society (GhaFoST).
Prof. Afoakwa noted that although Ghana is endowed with rich biodiversity and a diverse culinary heritage, food insecurity persists due to weak food value chains and limited investment in indigenous food systems. He stressed that sustainable solutions must be rooted in local knowledge, culture and science.

According to the Vice-Chancellor, Ghana and Africa at large must move beyond dependence on imported food solutions and adopt policies that deliberately promote indigenous foods as central components of national food security strategies. He emphasized that strengthening local food systems would not only enhance nutrition and resilience but also create jobs and stimulate economic growth.

Prof. Afoakwa further highlighted the critical role of universities in driving this transformation, urging higher education institutions to focus on innovation, entrepreneurship and practical research that addresses real societal challenges. He challenged students and researchers to translate academic knowledge into scalable solutions that modernize traditional foods while preserving their cultural identity.

He also underscored the need to bridge the gap between scientific research and indigenous knowledge systems, explaining that sustainable development can only be achieved when modern science builds upon local traditions rather than replacing them.

The KNUST Food Festival is an annual academic and cultural event that celebrates Ghana’s indigenous foods while promoting dialogue on sustainable food systems, nutrition and innovation.

ϳԹmarked a major milestone with the successful completion of its first PhD Viva under the home-grown Doctoral programme in Computer Science on Thursday, 10th July 2025, at the Vice-Chancellor’s Conference Room on the School of Graduate Studies and Research (SGSR) Block.
The sole candidate, a doctoral student in the Department of Computer Science, Mr. Justice Williams Asare, confidently defended his thesis titled “Development of a Multi-Architecture Convolutional Neural Network Model for Detecting Iron Deficiency Anaemia in Children Using Medical Images” before a panel of distinguished examiners.

Mr. Asare explaining his deep learning model to the examiners.

Explaining the focus of his thesis, Mr. Asare revealed that his research was inspired by the global public health crisis surrounding childhood anaemia. According to the World Health Organization, children aged 6 to 59 months represent the most vulnerable group, with nearly 42% affected globally. “The traditional models for detecting anaemia are invasive, costly and time-consuming. My aim is to develop deep learning models to identify anaemia in a non-invasive manner, particularly in deprived communities where medical resources are scarce,” he said.

He elaborated that the project is being executed in phases. The first phase involves the development and validation of the AI models, which have already been tested on external datasets such as those related to melanoma, monkeypox and rabies, to evaluate their performance. The next phase, which is dependent on securing funding, would see the integration of these models into smart devices or web applications for real-time usability. “Unfortunately, there’s no scholarship, sponsorship or grant, so the cost of implementing the models onto smart devices remains a significant hurdle,” Mr. Asare disclosed.

The examination panel comprised three renowned external examiners:

Dr. Kamal Kant Hiran, Sir Padampat Singhania University, India
Prof. Kofi Sarpong Adu-Manu, University of Ghana
Prof. Attlee Munyaradzi Gamundani, Namibia University of Science and Technology

The session was chaired by the Vice-Dean of the Faculty of Computing and Information Systems (FoCIS), Dr. Lempogo Forgor, who served as the non-examining internal chair. The candidate’s supervisory team included the Research Coordinator at the IT Department of FoCIS, Prof. Alfred Coleman, the Dean of FoCIS, Dr. William Leslie Brown-Acquaye, and a Senior Lecturer at the University of KwaZulu-Natal, Prof. Martin Ujakpa.

Prof. Coleman (left) and Prof. Eric Amankwa (right) listening with keen interest.

Mr. Asare’s performance earned commendation from the panel and all attendees. According to the Acting Pro Vice-Chancellor and Dean of SGSR, Prof. Ebenezer Malcalm, the candidate met all academic requirements and successfully passed the final oral defence. “This is a rigorous process that demonstrates a candidate’s mastery of his subject area. Mr. Asare clearly demonstrated command over his research and made significant contributions to knowledge,” Prof. Malcalm stated.

Prof. Malcalm also expressed hope that Mr. Asare would be retained as a faculty member to contribute to teaching and research at GCTU, given his demonstrated academic excellence and understanding of the university system.

The Coordinator of GCTU’s PhD programmes, Dr. Esther Asiedu, praised the overall organization of the viva. “The supervisors were proactive and the external examiners submitted their reports on time. This made today’s session one of the most smoothly executed,” she said, while acknowledging the need for improved feedback mechanisms in future engagements.

Mr. Asare, a full-time lecturer at Koforidua Technical University and Part-Time Lecturer at GCTU, is expected to graduate in the upcoming academic congregation, having fulfilled all academic and publication requirements.

ϳԹhas successfully concluded its second doctoral progress review session for the 2023 PhD cohort in a meeting held on Thursday, June 26, 2025.
The exercise aimed to evaluate each student’s research progress, ensure alignment with academic expectations and guide timely completion of their theses.
The session, which focused on students pursuing doctoral studies in the Information Technology (IT) discipline, followed an earlier review conducted on Tuesday, June 24, which spotlighted Computer Science PhD students. The Thursday session saw six out of eight expected students presenting the progress of their research to a review panel chaired by GCTU’s Research Coordinator, Prof. Alfred Coleman.

Prof. Coleman encourages early commitment and regular communication with supervisors.

Speaking at the conclusion of the session, Prof. Coleman emphasized the importance of commitment and consistent engagement with research supervisors. “If you don’t pursue your supervisors, forget it,” he cautioned. He announced the implementation of a formal Supervisor-Student Agreement Form to institutionalize communication and track progress. “This will become a binding document that guides expectations and progress,” he explained.
He also urged students to manage their time effectively: “Spend time to work on your thesis. In the quiet of the night, write something – anything. Before long, you’ll have accomplished more than you think.”

Dr.  Freeman sharing guidance on ethical clearance and timelines for thesis submission.

The Head of the Computer Science Department and panel member, Dr. Emmanuel Freeman, also addressed students, reiterating the significance of securing ethical clearance and staying on track for timely completion. “Whether your research involves human subjects or not, ethical clearance is non-negotiable,” he stated. He further highlighted the timelines for graduation, urging students to target submissions by March or July, depending on their intended graduation window.
Dr. Freeman also encouraged students to participate in GCTU’s upcoming international conference on the Fourth Industrial Revolution, co-hosted with the Namibia University of Science and Technology. “This is a home conference – take advantage and submit at least one paper from your thesis,” he advised.

A doctoral candidate presenting her research progress to the review panel during the session.

In a post-session interview, Prof. Coleman expressed satisfaction with the students’ development: “There has been tremendous progress. Many students are already moving into the analysis phase, which is encouraging.”
When asked to compare the IT and Computer Science sessions, he noted that while both groups are progressing well, “a few students in the IT stream need to improve, but we believe they will catch up soon.” He also highlighted the importance of early and consistent effort: “If you wait till the last minute, you will grow old in the system. The key is to start early and remain committed.”

A total of seven PhD students were reviewed

ϳԹhas hosted a pivotal PhD review session on Tuesday, June 24, 2025, at the Vice-Chancellor’s Conference Room on the School of Graduate Studies and Research (SGSR) block.
The session which marked the second in a series of reviews for the 2023 cohort, aimed at assessing the progress of doctoral candidates in Computer Science.

A PhD student making his presentation.

The session featured presentations from seven PhD candidates whose theses span critical areas of computer science, including machine learning applications in healthcare and education, as well as data security for wearable medical devices. The six-member panel of reviewers was chaired by a Research Coordinator, Prof. Alfred Coleman.
In his remarks, Prof. Coleman commended both students and panelists for their dedication, while also emphasizing the importance of timelines and accountability. “We are left barely with two years,” he noted. “At the end of the third year, your research must go for external examination and that process demands a lot of time. Without systematic hard work, the time will fly by.”

Members of the panel were drawn from the Faculty of Computing and Information Systems (FoCIS)

To ensure sustained progress, Prof. Coleman announced the implementation of supervisor-student agreements, which will outline submission timelines, regular meetings and expectations. He urged students to take the initiative in engaging their supervisors, stating, “If you don’t pursue your supervisor to have time with you, I bet you, he cannot have time for you.”
In a follow-up interview, Prof. Coleman expressed his satisfaction with the students’ progress. “There is a tremendous improvement,” he said. “They have really improved a lot. We even never expected that they could have gone this far, but they have.”

Prof. Coleman chaired the 6-member panel of reviewers

He also highlighted the relevance of the students’ work, particularly those focusing on machine learning and its applications in solving real-world problems.
The session was not just a review – It served as a motivation platform, where students could receive constructive feedback and re-align their research trajectories. One of the PhD candidates randomly picked for a chat and whose research focuses on Data Security for Wearable Medical Devices, shared insights regarding his work. “These devices collect specific datasets like heart rate and general health indicators. The concern is about how secure this data is as it travels over the Internet,” he explained.
Reflecting on the feedback from the panel, the student acknowledged the need to improve his pace. “I’ve published about two papers already, and a third is in the pipeline. But I have to push harder to meet the two-year timeline.” He encouraged his peers to maintain strong communication with their supervisors: “They hold the key to helping you achieve success. Engage them consistently.”
The University is set to hold another review session for PhD candidates in Information Technology on Thursday, June 26, 2025.
